Ingredients

  • 4 boneless skinless chicken breasts, cubed
  • 15 ml (1 Tbsp.) olive oil
  • 120 ml (1/2 cup) soy sauce
  • 120 ml (1/2 cup) water
  • 45 g (3 Tbsp.) packed light brown sugar
  • 30 ml (2 Tbsp.) rice vinegar
  • 5 ml (1/2 tsp.) sesame oil (optional)
  • 5 ml (1 tsp.) ground ginger
  • 10 ml (2 tsp.) minced garlic
  • 30 ml (2 Tbsp.) honey
  • 15 ml (3 tsp.) cornstarch
  • sesame seeds and chopped green onions for garnish
  • rice for serving
  • steamed veggies for serving


Instructions

  1. Warm the olive oil in a large pan over medium-high heat.
  2. Place the cubed chicken in the pan and cook until the pieces are browned and fully cooked through, with no pink remaining.
  3. As the chicken cooks, make the teriyaki sauce by combining soy sauce, water, honey, light brown sugar, rice vinegar, optional sesame oil, ginger, garlic, and cornstarch in a medium mixing bowl and whisking thoroughly.
  4. After the chicken is cooked, pour the prepared teriyaki sauce into the pan and stir continuously until the mixture thickens.
  5. Serve right away with your choice of white or brown rice and steamed vegetables. Top with sesame seeds and chopped green onions for decoration.

Notes

  • Marinate the cubed chicken in teriyaki sauce for at least 30 minutes before cooking for a more flavorful dish.
