Ingredients
- 2 lbs (907 g) beef breast, chopped
- 1 onion, chopped
- 2 bell peppers, chopped
- 1 small head of broccoli, chopped
- Salt, pepper, garlic powder, smoked paprika
- 1-2 tbsp (15-30 ml) vegetable oil
- Teriyaki sauce
- 2 green onions, chopped
Instructions
- Begin by dicing all the vegetables. Ensure the onions and peppers are cut to a similar size, while the broccoli should be in moderately large chunks.
- Cut the beef into cubes.
- Lightly coat a large baking sheet with cooking spray. Place all the chopped vegetables into a large mixing bowl, drizzle with a bit of oil, and season with salt, pepper, garlic powder, and smoked paprika to taste. Mix until the vegetables are evenly covered with oil and spices. Spread the vegetables on one side of the prepared baking sheet.
- Place the beef cubes in the bowl and season them just like the vegetables. Add a small amount of Teriyaki sauce and stir until the beef is well coated in both seasoning and sauce.
- Arrange the beef cubes on the other half of the baking sheet.
- Roast in the oven at 400 degrees F for about 20-25 minutes. Once the beef is cooked, drain any excess liquid, and broil for a few minutes if you prefer.
- Combine the beef and vegetables, and drizzle with additional Teriyaki sauce if desired. Sprinkle the chopped green onions on top.
- Serve the dish as it is or over rice. It’s delicious with white rice or quick-cooking fried rice. Enjoy!
