Ingredients

  • 1 cup (240 ml) teriyaki sauce (see below for full recipe)
  • 4 boneless skinless chicken breasts (approx 2 lbs or 900 g pounded to even thickness)
  • 2 tablespoons (30 ml) vegetable oil
  • 1 tsp (5 ml) minced garlic
  • 4 rings of pineapple, fresh
  • 1 green onion, sliced into rings
  • 1 tablespoon (15 ml) cornstarch
  • 1 tablespoon (15 ml) cold water
  • 1/2 cup (100 g) brown sugar
  • 1/2 cup (120 ml) soy sauce
  • 1/4 cup (60 ml) rice vinegar
  • 1 clove garlic, minced
  • 1/2 teaspoon (3 ml) ground ginger
  • 1/4 teaspoon (1 ml) ground black pepper


Instructions

  1. Cover the chicken with plastic wrap and flatten it to an even thickness using a meat mallet.
  2. Sprinkle both sides of the chicken with salt and pepper.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Cook the chicken for 5-7 minutes on each side until it is browned and thoroughly cooked, then place it on a plate and cover it to maintain warmth.
  5. In the same skillet, add pineapple rings and sauté over medium heat for 1-2 minutes until the garlic releases its aroma.
  6. Return the chicken to the skillet, pour the teriyaki sauce over it, and let it simmer until the sauce thickens to your liking.
  7. Serve with freshly cracked pepper and, if desired, sprinkle sliced green onions on top.
  8. Mix all the ingredients thoroughly in a large bowl.
