Ingredients
- 1 cup (240 ml) teriyaki sauce (see below for full recipe)
- 4 boneless skinless chicken breasts (approx 2 lbs or 900 g pounded to even thickness)
- 2 tablespoons (30 ml) vegetable oil
- 1 tsp (5 ml) minced garlic
- 4 rings of pineapple, fresh
- 1 green onion, sliced into rings
- 1 tablespoon (15 ml) cornstarch
- 1 tablespoon (15 ml) cold water
- 1/2 cup (100 g) brown sugar
- 1/2 cup (120 ml) soy sauce
- 1/4 cup (60 ml) rice vinegar
- 1 clove garlic, minced
- 1/2 teaspoon (3 ml) ground ginger
- 1/4 teaspoon (1 ml) ground black pepper
Instructions
- Cover the chicken with plastic wrap and flatten it to an even thickness using a meat mallet.
- Sprinkle both sides of the chicken with salt and pepper.
- Heat vegetable oil in a large skillet over medium heat.
- Cook the chicken for 5-7 minutes on each side until it is browned and thoroughly cooked, then place it on a plate and cover it to maintain warmth.
- In the same skillet, add pineapple rings and sauté over medium heat for 1-2 minutes until the garlic releases its aroma.
- Return the chicken to the skillet, pour the teriyaki sauce over it, and let it simmer until the sauce thickens to your liking.
- Serve with freshly cracked pepper and, if desired, sprinkle sliced green onions on top.
- Mix all the ingredients thoroughly in a large bowl.
