- 2 ripe pineapples
- 1 cup cooked rice (white or brown)
- 1 cup teriyaki sauce
- 1 bell pepper, diced
- 1 cup snap peas

- Sesame seeds for garnish
- Chopped green onions for garnish
Instructions
- Cut the pineapples in half lengthwise and scoop out the insides, leaving a shell. Chop the pineapple flesh into small pieces and set aside.
- In a large skillet, heat the teriyaki sauce over medium heat.
- Add the diced chicken (or tofu), bell pepper, snap peas, and chopped pineapple. Stir-fry for about 5-7 minutes until the vegetables are tender and the chicken is heated through.
