Description

A vibrant and flavorful dish combining sweet pineapple, savory teriyaki sauce, and fresh vegetables, perfect for a quick weeknight meal.


Ingredients

  • 2 ripe pineapples
  • 1 cup cooked rice (white or brown)
  • 1 cup teriyaki sauce
  • 1 bell pepper, diced
  • 1 cup snap peas
  • 1 cup cooked chicken, diced (or tofu for a vegetarian option)
  • Sesame seeds for garnish
  • Chopped green onions for garnish


Instructions

  1. Cut the pineapples in half lengthwise and scoop out the insides, leaving a shell. Chop the pineapple flesh into small pieces and set aside.
  2. In a large skillet, heat the teriyaki sauce over medium heat.
  3. Add the diced chicken (or tofu), bell pepper, snap peas, and chopped pineapple. Stir-fry for about 5-7 minutes until the vegetables are tender and the chicken is heated through.
