Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons brown sugar or honey
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon sesame oil
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 teaspoons vegetable or neutral oil (for cooking)
  • 2 green onions, chopped
  • 1 teaspoon toasted sesame seeds


Instructions

  1. Combine soy sauce, brown sugar or honey, minced garlic, grated ginger, rice vinegar, and sesame oil in a bowl. Stir well until the sugar dissolves, creating a vibrant marinade.
  2. Place the chicken pieces in a shallow dish or zip-lock bag and pour the marinade over them. Let the chicken soak in the flavors for at least 30 minutes, or up to 4 hours.
  3. Heat a skillet over medium-high heat and add a small amount of oil. Remove the chicken from the marinade (reserve the marinade) and cook it for 5-7 minutes on each side until golden brown and cooked through.
  4. Add the pineapple chunks to the skillet and pour the reserved marinade over everything. Simmer for 3-5 minutes to thicken the sauce.
  5. Serve by sprinkling with chopped green onions and toasted sesame seeds.

Notes

For maximum flavor, marinate the chicken longer if possible. Serve on a bed of rice or quinoa for a complete meal.
