Description
A comfort food classic featuring tender chicken, sautéed mushrooms, and a blend of delicious cheeses.
Ingredients
- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 2 tablespoons of olive oil (or butter)
- 1 teaspoon of paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- ½ teaspoon of salt
- ½ teaspoon of black pepper
- 1 cup of sliced mushrooms
- 1 small onion, thinly sliced
- 1 cup of shredded mozzarella cheese (or Monterey Jack)
- ½ cup of shredded cheddar cheese
- 2 tablespoons of fresh parsley, chopped (for garnish)
Instructions
- Pound the chicken breasts to an even thickness of about ½ inch. Pat them dry with paper towels.
- Mix the paprika, garlic powder, onion powder, salt, and black pepper. Rub the mixture evenly over both sides of the chicken.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Cook the chicken for about 5–6 minutes on each side until golden brown and the internal temperature reaches 165°F (74°C). Remove the chicken and keep it warm.
- Add the remaining oil, along with the sliced mushrooms and onions. Sauté for 5–7 minutes until softened and caramelized.
- Place the chicken back in the skillet. Top with sautéed mushrooms and onions, then sprinkle mozzarella and cheddar cheese. Cover and cook on low heat for 2–3 minutes until cheese melts.
- Garnish with fresh parsley before serving.
Notes
Use a meat thermometer for perfectly cooked chicken and feel free to experiment with cheese blends.
