Ingredients

  • 1 1/2- 2 lb (907 g). boneless skinless chicken breasts 2 medium-large chicken breasts
  • 1/2 cup (120 ml) italian dressing
  • 1 tbsp (15 ml). avocado oil or other neutral, high heat oil
  • 1 tbsp (15 ml). butter
  • 10 oz (283 g). cremini mushrooms sliced
  • 1/2 cup (120 ml) yellow onion sliced
  • 2 tbsp (30 ml). water approximately
  • 1/4 tsp (1 ml). white pepper
  • 1/4 tsp (1 ml). black pepper
  • 1/4 tsp (1 ml). onion powder
  • 1/4 tsp (1 ml). garlic powder
  • 1/2 tsp (3 ml). salt
  • 2 oz (57 g). Monterey Jack cheese sliced


Instructions

  1. Set the chicken breasts on a plate or cutting board. Use a jacquard tool or fork to puncture the meat in several places. If using a fork, stab each side of the chicken breast 10 to 15 times. Transfer the chicken to a dish or a large resealable bag.
  2. Wash your hands thoroughly. Pour the Italian dressing over the chicken to coat it evenly. Refrigerate the chicken.
  3. Allow the chicken to marinate for a period ranging from 2 to 24 hours, depending on how much time you have. The longer it marinates, the more flavorful it will become.
  4. Once marinating is complete, it’s time to cook!
  5. Set your oven to preheat at 400 degrees F.
  6. Place a cast iron skillet on the stove and heat it over medium-high. Pour oil into the pan, then carefully add the chicken breasts. Cook them for about 5 minutes without moving them, allowing a rich brown color to develop. Turn them over and repeat on the other side. Transfer them to a clean plate.
  7. Lower the heat to medium and add butter to the pan. Toss in the sliced mushrooms and onions, sautéing them until they’re soft and aromatic, which should take about 5-7 minutes. Add water and scrape up any browned bits from the bottom of the pan to incorporate their flavor.
  8. Stir in the spices. Push the mushroom and onion mixture to one side of the skillet and return the chicken breasts to the pan. Spoon the mushroom-onion mixture over the chicken, dividing it evenly.
  9. Cover the chicken with slices of cheese and place the skillet in the preheated oven.
  10. Bake for 10 minutes, ensuring the chicken is fully cooked and the cheese is melted and starting to brown.
