Ingredients

  • 1 1/2 pounds (680 g) ground beef (or chicken)
  • Black pepper
  • 4 cloves garlic, chopped
  • 1 tablespoon (15 ml) fresh grated ginger (or 1/4 cup (60 ml) candied ginger)
  • 1-3 teaspoon (10 ml) s Chinese 5 spice
  • 1/3 cup (80 ml) tamari or soy sauce
  • 1/4 cup (60 ml) Thai chili sauce (homemade in notes)
  • 1/4 cup (60 ml) chopped green onions
  • 4 Persian cucumbers, chopped
  • 2 cup (480 ml) s cilantro, chopped
  • 1/2 cup (120 ml) Thai basil, chopped
  • 1/3 cup (80 ml) chopped roasted peanuts
  • 8-10 flour tortillas, warmed
  • Chili paste, for serving
  • Toasted sesame oil, for serving


Instructions

  1. In a large pan, sauté the beef with a sprinkle of black pepper over medium heat, breaking it apart as it cooks until it turns brown, around 5 minutes. Incorporate the garlic, ginger, and Chinese 5 spice, stirring for another minute. Pour in the tamari and Thai chili sauce. Allow the mixture to simmer and cook until the sauce clings to the beef, 3-5 minutes. Mix in 2 tablespoons of chopped green onions, then take it off the heat.
  2. Heat one tortilla at a time in the microwave for 15 seconds. Place the beef mixture down the center, and layer with cucumber, cilantro, basil, green onion, and peanuts. Fold the tortilla over the filling, then tuck the sides and ends over the filling and roll it forward. Repeat with the remaining ingredients.
  3. Serve warm with additional soy sauce, chili paste, and toasted sesame oil for dipping. For a complete meal, serve alongside rice.
