A rich and creamy Thai peanut curry featuring chicken, carrots, and potatoes, served with a vibrant peanut sauce that’s easy to prepare.
Ingredients
- 2 carrots, cut into bite-sized pieces
- 2 medium potatoes, cut into bite-sized pieces
- 1/2 yellow onion, diced
- 2 chicken breasts, cubed
- 2 Tbsp. olive oil (or coconut/vegetable oil)
- 2 tsp. ground ginger
- 2 tsp. minced garlic
- 1 jar (4 oz.) red curry paste
- 2 cans coconut milk
- 1/4 cup + 2 Tbsp. peanut butter
- 5 Tbsp. brown sugar
- 4 tsp. soy sauce
- Juice from 1 lime
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add diced onion, chopped carrots, and chopped potatoes; sauté for 4-5 minutes until softened.
- Introduce cubed chicken, ground ginger, and minced garlic; stir in red curry paste until well combined.
- Pour in coconut milk and bring to a slight simmer; reduce heat and let soften for about 10 minutes.
- Stir in peanut butter, brown sugar, soy sauce, and lime juice; cook for another 4-5 minutes.
- Serve over rice and enjoy!
Notes
Taste and adjust the levels of sugar, soy sauce, and lime juice to suit your preference. Consider adding fresh herbs for garnish before serving.
