Description

A rich and creamy Thai peanut curry featuring chicken, carrots, and potatoes, served with a vibrant peanut sauce that’s easy to prepare.


Ingredients

  • 2 carrots, cut into bite-sized pieces
  • 2 medium potatoes, cut into bite-sized pieces
  • 1/2 yellow onion, diced
  • 2 chicken breasts, cubed
  • 2 Tbsp. olive oil (or coconut/vegetable oil)
  • 2 tsp. ground ginger
  • 2 tsp. minced garlic
  • 1 jar (4 oz.) red curry paste
  • 2 cans coconut milk
  • 1/4 cup + 2 Tbsp. peanut butter
  • 5 Tbsp. brown sugar
  • 4 tsp. soy sauce
  • Juice from 1 lime


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add diced onion, chopped carrots, and chopped potatoes; sauté for 4-5 minutes until softened.
  3. Introduce cubed chicken, ground ginger, and minced garlic; stir in red curry paste until well combined.
  4. Pour in coconut milk and bring to a slight simmer; reduce heat and let soften for about 10 minutes.
  5. Stir in peanut butter, brown sugar, soy sauce, and lime juice; cook for another 4-5 minutes.
  6. Serve over rice and enjoy!

Notes

Taste and adjust the levels of sugar, soy sauce, and lime juice to suit your preference. Consider adding fresh herbs for garnish before serving.
