Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, diced (450 g)
  • 2 cups chicken broth (480 ml)
  • 2 cans white beans, drained and rinsed (15 ounces/425 g each)
  • 1 can diced green chilies (4 ounces/113 g)
  • 1 teaspoon ground cumin (5 g)
  • 1 teaspoon dried oregano (1 g)
  • 1/2 teaspoon ground coriander (1 g)
  • 1/4 teaspoon (1 ml) chili powder (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup plain yogurt (120 ml)
  • 1/4 cup chopped fresh cilantro (15 g)
  • Juice of 1 lime


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until soft, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add diced chicken breasts to the pot and cook until no longer pink, about 5-7 minutes.
  5. Pour in chicken broth and bring to a simmer.
  6. Stir in drained white beans and diced green chilies.
  7. Add ground cumin, dried oregano, ground coriander, and cayenne pepper, if using.
  8. Season with salt and black pepper to taste.
  9. Reduce heat to low and simmer for 20 minutes.
  10. Remove pot from heat and stir in sour cream.
  11. Add chopped fresh cilantro and juice of 1 lime.
  12. Mix well and adjust seasoning if necessary.
