Ingredients

  • 1 can black beans, rinsed and drained (240g)
  • 1 can chickpeas (garbanzo beans) (240g)
  • 1 can corn, undrained (340g)
  • 1 can diced tomatoes with green chilies, undrained (290g)
  • 1 packet ranch seasoning mix
  • 1 tsp (5 ml) ground cumin
  • 1 tbsp (15 ml) chili powder
  • 1 tsp (5 ml) onion powder
  • 1 8 oz (227 g) package cream cheese
  • 2 boneless, skinless chicken breasts


Instructions

  1. Put the chicken at the base of the slow cooker, then add the entire contents of the corn, tomatoes with green chilies, black beans, and chickpeas on top.
  2. Sprinkle the spices and ranch seasoning over everything.
  3. Mix the ingredients together gently.
  4. Place the cream cheese on top of the mixture.
  5. Cover with the lid and let it cook on low heat for 6 to 8 hours.
  6. Blend the cream cheese into the chili.
  7. Using two forks, pull apart the chicken.
  8. Mix everything thoroughly and serve.

Notes

  • Consider using softened cream cheese for a creamier texture.
  • Adjust the spice level by adding more or less chili powder.
