Ingredients
- 1 can black beans, rinsed and drained (240g)
- 1 can chickpeas (garbanzo beans) (240g)
- 1 can corn, undrained (340g)
- 1 can diced tomatoes with green chilies, undrained (290g)
- 1 packet ranch seasoning mix
- 1 tsp (5 ml) ground cumin
- 1 tbsp (15 ml) chili powder
- 1 tsp (5 ml) onion powder
- 1 8 oz (227 g) package cream cheese
- 2 boneless, skinless chicken breasts
Instructions
- Put the chicken at the base of the slow cooker, then add the entire contents of the corn, tomatoes with green chilies, black beans, and chickpeas on top.
- Sprinkle the spices and ranch seasoning over everything.
- Mix the ingredients together gently.
- Place the cream cheese on top of the mixture.
- Cover with the lid and let it cook on low heat for 6 to 8 hours.
- Blend the cream cheese into the chili.
- Using two forks, pull apart the chicken.
- Mix everything thoroughly and serve.
Notes
- Consider using softened cream cheese for a creamier texture.
- Adjust the spice level by adding more or less chili powder.
- To make it vegetarian, omit the chicken and add more beans or veggies.
