Ingredients
- 6 Chicken Thighs (900 g)
- 1 tsp Dried Basil (5 ml)
- 1 tsp Onion Powder (5 ml)
- 1 tbsp Olive Oil (15 ml)
- 1 tbsp Vegetable Oil (15 ml)
- 12 oz Cherry Tomatoes (340 g)
- 16 oz Orzo Pasta (450 g)
- 7 cups (1680 ml) Chicken Broth (1.7 liters)
- 2 sprigs Fresh Basil Leaves
- 3 cloves Garlic
- 1/2 tsp Italian Seasoning (2.5 ml)
- 1/2 tsp Crushed Red Pepper Flakes (2.5 ml)
- 1 Lemon
- 4 oz Feta Cheese (115 g)

- to taste Ground Black Pepper
Instructions
- Sprinkle the chicken thighs with dried basil, onion powder, salt, and pepper. Pierce the meat with a fork and massage the spices into the chicken using your hands.
- Warm up unsalted butter and half of the olive oil in a skillet over medium-high heat. Once the mixture is hot, place the chicken in the pan with the skin facing down. Allow it to cook for 7-10 minutes per side until thoroughly cooked, then take the chicken out of the pan and set it aside.
- In the same skillet, add the rest of the olive oil and heat over medium-high. Toss in the cherry tomatoes and cook them for about 5-8 minutes until they start to soften.
- While the tomatoes cook, boil the chicken broth in a large pot and cook the orzo pasta for roughly 5 minutes before draining. Save a bit of the pasta water for later use, if necessary.
- Add fresh basil leaves, crushed garlic, Italian seasoning, crushed red pepper flakes, a teaspoon of lemon juice, salt, and pepper to the tomatoes. Mix everything together.
- Combine the cooked orzo with the tomato mixture in the pan, return the chicken to the pan, and allow everything to heat for about 3 minutes.
- Take the pan off the heat, garnish the dish with basil, and serve it topped with feta cheese.
