Ingredients

  • 2 tablespoons olive oil (30 ml)
  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon Italian seasoning (5 g)
  • 3 cloves garlic, minced
  • 1 cup heavy cream (240 ml)
  • 1 cup chicken broth (240 ml)
  • 1 cup grated Parmesan cheese (100 g)
  • 2 cups fresh spinach (60 g)
  • 12 ounces fettuccine pasta (340 g)
  • 1/2 cup sun-dried tomatoes, chopped (80 g)
  • 1 tablespoon fresh basil, chopped (5 g)


Instructions

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt, black pepper, and Italian seasoning.
  4. Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, until golden brown and cooked through.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  7. Pour in the heavy cream and chicken broth, stirring to combine.
  8. Bring the mixture to a simmer and cook for 5 minutes, allowing it to thicken slightly.
  9. Stir in the grated Parmesan cheese until melted and the sauce is smooth.
  10. Add the fresh spinach to the skillet, stirring until wilted.
  11. Stir in the sun-dried tomatoes and mix well.
  12. Slice the cooked chicken breasts and return them to the skillet.
  13. Add the cooked fettuccine pasta to the skillet and toss to coat in the sauce.
  14. Sprinkle with chopped fresh basil before serving.
