Ingredients
- 2 tablespoons olive oil (30 ml)
- 4 boneless, skinless chicken breasts
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon Italian seasoning (5 g)
- 3 cloves garlic, minced
- 1 cup heavy cream (240 ml)
- 1 cup chicken broth (240 ml)
- 1 cup grated Parmesan cheese (100 g)
- 2 cups fresh spinach (60 g)
- 12 ounces fettuccine pasta (340 g)
- 1/2 cup sun-dried tomatoes, chopped (80 g)
- 1 tablespoon fresh basil, chopped (5 g)
Instructions
- Cook the fettuccine pasta according to package instructions. Drain and set aside.
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, black pepper, and Italian seasoning.
- Add the chicken breasts to the skillet and cook for 5-7 minutes on each side, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine.
- Bring the mixture to a simmer and cook for 5 minutes, allowing it to thicken slightly.
- Stir in the grated Parmesan cheese until melted and the sauce is smooth.
- Add the fresh spinach to the skillet, stirring until wilted.
- Stir in the sun-dried tomatoes and mix well.
- Slice the cooked chicken breasts and return them to the skillet.
- Add the cooked fettuccine pasta to the skillet and toss to coat in the sauce.
- Sprinkle with chopped fresh basil before serving.
