Ingredients

- – 12 ounces (340g) fettuccine
- – 4 slices beef bacon, chopped
- – 1 pound (454g) chicken tenders, cut into 1-inch pieces
- – 2 cloves garlic, minced
- – 4 plum tomatoes, chopped
- – 1 cup (240ml) heavy cream
- – 5 ounces (142g) baby spinach
- – 3/4 cup (180 ml) grated Parmesan
- – 3 tablespoons (45 ml) chopped fresh basil
Instructions
- Fill a large pot with water, season it with salt, and bring it to a boil. Cook the fettuccine as directed on the package, then drain.
- In the meantime, place the bacon pieces in a large skillet while it’s still cool. Cook over a medium-high flame, stirring now and then, until they turn crispy, which should take roughly 8 minutes. Use a slotted spoon to move them to a plate.
- Lightly season the chicken pieces with salt and pepper before adding them to the skillet in a single layer. Allow them to cook without moving until they become golden on one side, which will take 2 to 3 minutes. Continue cooking, stirring occasionally, until they are fully done, about 4 more minutes. Move them to the plate with the bacon.
- Turn down the heat to medium, add the garlic, and stir until you can smell its aroma, about 30 seconds. Pour in the tomatoes and cream, bringing the mixture to a gentle simmer. Add the spinach and stir until it softens slightly. Combine the bacon, chicken, fettuccine, and Parmesan in the skillet, mixing with tongs until everything is thoroughly coated. Adjust the seasoning with salt and pepper to your liking. Garnish with basil and serve.
