Ingredients

  • – 2 lbs (900 g) boneless skinless chicken breast (about 3-4 chicken breasts)
  • – 2 cloves garlic
  • – a pinch of salt and pepper
  • – 2 oz (57 g) fresh baby spinach
  • – 14 oz (400 g) can artichoke hearts, drained and chopped
  • – 8.5 oz (240 g) jar sun-dried tomatoes, drained with 1 tbsp vegetable oil reserved, and chopped
  • – 1 cup (240 ml) mozzarella cheese, grated


Instructions

  1. Set your oven to 375ËšF to warm up.
  2. Arrange the chicken breasts evenly in the base of a large baking dish. Sprinkle them with salt and pepper, then crush the garlic and distribute it evenly over the chicken. Layer the spinach, chopped artichoke hearts, and diced sun-dried tomatoes over the chicken, then pour over the reserved vegetable oil from the sun-dried tomatoes. Finally, sprinkle the grated mozzarella cheese on top.
  3. Place the dish in the oven for a total of 45-50 minutes. Let it bake uncovered for the first 20 minutes, then cover it loosely with foil and continue baking for another 25-30 minutes, or until the chicken reaches an internal temperature of 165ËšF.
