Description
Delicious chicken enchiladas made with shredded chicken, gooey cheese, and zesty enchilada sauce, all wrapped snugly in flour tortillas.
Ingredients
- 2 cups cooked shredded chicken
- 2 cups shredded cheese (cheddar or a Mexican blend)
- 1 can (10 oz) enchilada sauce
- 8 small flour tortillas
- 1/2 cup diced onions (optional)
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the shredded chicken, 1 cup of cheese, diced onions (if using), garlic powder, salt, and pepper.
- Pour a little enchilada sauce into the bottom of a baking dish.
- Take a tortilla, fill it with the chicken mixture, and roll it up. Place it seam-side down in the baking dish.
- Repeat with the remaining tortillas.
- Pour the rest of the enchilada sauce over the rolled tortillas and sprinkle the remaining cheese on top.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro if desired and serve warm.
Notes
For added flavor, consider warming the enchilada sauce before assembling. You can also add jalapeños for a spicy kick and experiment with different types of cheese.
