A comforting and hearty dish combining ziti pasta, fresh vegetables, and creamy cheeses, perfect for family gatherings and casual get-togethers.
Ingredients
- 12 oz (340g) ziti pasta
- 2 tbsp olive oil
- 2 cloves minced garlic
- 1 chopped onion
- 1 chopped bell pepper
- 1 sliced zucchini
- 1 cup sliced mushrooms
- 2 cups fresh spinach
- 15 oz (425g) ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 24 oz (680g) marinara sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ziti pasta according to the package instructions until al dente; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until translucent.
- Toss in chopped bell pepper, sliced zucchini, and sliced mushrooms. Cook until softened, about 5 minutes. Stir in fresh spinach until wilted.
- In a large bowl, combine the cooked ziti pasta, sautéed vegetables, ricotta cheese, half of the shredded mozzarella, marinara sauce, Italian seasoning, and a pinch of salt and pepper. Mix well until everything is coated.
- Transfer the mixture to a greased baking dish. Sprinkle the remaining mozzarella and grated parmesan cheese on top.
- Bake for 25-30 minutes, until the cheese becomes bubbly and golden brown.
- Allow the dish to cool slightly before serving.
Notes
Feel free to mix and match vegetables depending on what’s fresh or in season. This dish also makes a great make-ahead option, and leftovers keep well in the refrigerator for up to three days.
