Description

A comforting and hearty dish combining ziti pasta, fresh vegetables, and creamy cheeses, perfect for family gatherings and casual get-togethers.


Ingredients

  • 12 oz (340g) ziti pasta
  • 2 tbsp olive oil
  • 2 cloves minced garlic
  • 1 chopped onion
  • 1 chopped bell pepper
  • 1 sliced zucchini
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 15 oz (425g) ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 24 oz (680g) marinara sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ziti pasta according to the package instructions until al dente; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add minced garlic and chopped onion, and sauté until translucent.
  4. Toss in chopped bell pepper, sliced zucchini, and sliced mushrooms. Cook until softened, about 5 minutes. Stir in fresh spinach until wilted.
  5. In a large bowl, combine the cooked ziti pasta, sautéed vegetables, ricotta cheese, half of the shredded mozzarella, marinara sauce, Italian seasoning, and a pinch of salt and pepper. Mix well until everything is coated.
  6. Transfer the mixture to a greased baking dish. Sprinkle the remaining mozzarella and grated parmesan cheese on top.
  7. Bake for 25-30 minutes, until the cheese becomes bubbly and golden brown.
  8. Allow the dish to cool slightly before serving.

Notes

Feel free to mix and match vegetables depending on what’s fresh or in season. This dish also makes a great make-ahead option, and leftovers keep well in the refrigerator for up to three days.
