Description

An aromatic and flavorful Vietnamese grilled chicken dish marinated with ginger, garlic, and a balance of salty and sweet elements, perfect for any occasion.

Ingredients

  • 4 chicken thighs (skinless)
  • 2 tablespoons ginger, minced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • ¼ cup cilantro, chopped
  • 1 teaspoon chili flakes

Instructions

  1. Mix the ginger, garlic, soy sauce, lime juice, fish sauce, brown sugar, cilantro, and chili flakes to create the marinade.
  2. Add the chicken to the marinade and let it soak for at least 30 minutes, preferably a few hours or overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and grill it for about 6-8 minutes on each side, or until fully cooked and has nice grill marks.
  5. Serve the grilled chicken in Pho, rice bowls, or salads, and enjoy!

Notes

For juicier chicken, use skinless chicken thighs. Consider brining chicken breasts before marinating to retain moisture.
