Description

A chilled and hearty blend of shredded chicken, crisp apples, celery, and a creamy yogurt-based dressing, perfect for gatherings or meal prep.


Ingredients

  • 3 cups shredded or chopped chicken breast
  • 1 large apple, diced
  • 8 celery stalks, chopped
  • 1/4 red onion, diced small
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup toasted pecans, chopped
  • 3 Tbsp nonfat Greek yogurt or dairy-free sour cream/yogurt
  • 3 Tbsp lite mayo
  • 2 Tbsp clear balsamic vinegar or apple cider vinegar
  • 1 Tbsp fresh squeezed lemon
  • 1/2 tsp poppy seeds (optional)
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper


Instructions

  1. In a large bowl, combine the shredded chicken breast, diced apple, chopped celery, red onion, parsley, and toasted pecans.
  2. In a separate small bowl, whisk together the Greek yogurt, lite mayo, balsamic or apple cider vinegar, fresh lemon juice, kosher salt, and black pepper until smooth.
  3. Pour the dressing over the salad mixture in the large bowl.
  4. Toss all ingredients well until the salad is evenly coated with the dressing.
  5. Serve immediately or store in the fridge for later use.

Notes

For the best flavor, allow the salad to sit for 30 minutes before serving. Store leftovers in an airtight container for up to three days.
