Description

Ingredients

  • 2 cups cooked white beans
  • 1 lb chicken, cooked and shredded
  • 1 cup corn
  • 2-3 chiles (green or red, diced)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until softened.
  2. Add the diced chiles, shredded chicken, white beans, and corn.
  3. Pour in chicken broth and stir well.
