Description
A comforting and hearty white chicken chili featuring shredded chicken, creamy white beans, and zesty green chiles.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup cream or half-and-half
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Optional toppings: cilantro, lime, cheese
Instructions
- In a large pot, sauté onion and garlic until translucent.
- Add in the shredded chicken, white beans, green chiles, cumin, paprika, salt, and pepper. Stir well to combine.
- Pour in the chicken broth and bring to a simmer.
- Stir in the cream and cook for an additional 5-10 minutes.
- Serve hot, garnished with optional toppings like cilantro, lime, or cheese.
Notes
Experiment with spice levels by adjusting cumin and paprika. Leftover roast chicken works great too!
