Description

A comforting and hearty white chicken chili featuring shredded chicken, creamy white beans, and zesty green chiles.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup cream or half-and-half
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: cilantro, lime, cheese


Instructions

  1. In a large pot, sauté onion and garlic until translucent.
  2. Add in the shredded chicken, white beans, green chiles, cumin, paprika, salt, and pepper. Stir well to combine.
  3. Pour in the chicken broth and bring to a simmer.
  4. Stir in the cream and cook for an additional 5-10 minutes.
  5. Serve hot, garnished with optional toppings like cilantro, lime, or cheese.

Notes

Experiment with spice levels by adjusting cumin and paprika. Leftover roast chicken works great too!
