A warm and hearty white chicken chili, perfect for chilly evenings and gatherings, featuring tender chicken, creamy beans, and a blend of spices.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can green chilies
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt to taste
- Pepper to taste
- 1 cup sour cream
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish
Instructions
- In a large pot, sautƩ onions and garlic until translucent.
- Add the shredded chicken, white beans, corn, green chilies, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a simmer and cook for about 20 minutes.
- Stir in the sour cream until well combined.
- Serve hot, topped with shredded cheese and cilantro if desired.
Notes
For a creamier texture, blend a portion of the beans before adding to the pot. Use leftover rotisserie chicken to save time.
