Description

A warm and hearty white chicken chili, perfect for chilly evenings and gatherings, featuring tender chicken, creamy beans, and a blend of spices.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can green chilies
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • Pepper to taste
  • 1 cup sour cream
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish


Instructions

  1. In a large pot, sautƩ onions and garlic until translucent.
  2. Add the shredded chicken, white beans, corn, green chilies, chicken broth, cumin, chili powder, salt, and pepper.
  3. Bring to a simmer and cook for about 20 minutes.
  4. Stir in the sour cream until well combined.
  5. Serve hot, topped with shredded cheese and cilantro if desired.

Notes

For a creamier texture, blend a portion of the beans before adding to the pot. Use leftover rotisserie chicken to save time.
