Description

A creamy and comforting white chicken chili featuring tender chicken, white beans, and aromatic spices, perfect for cozy evenings.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup corn, frozen or canned
  • 1 package (8 oz) cream cheese
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Lime wedges for serving


Instructions

  1. In a large pot or slow cooker, combine the cooked chicken, white beans, green chilies, corn, chicken broth, cumin, garlic powder, onion powder, salt, and pepper.
  2. If using the stovetop, bring to a simmer over medium heat and stir in the cream cheese until melted and fully blended. Cook for about 20-30 minutes.
  3. If using a slow cooker, cook on low for 4-6 hours and stir in the cream cheese until melted and fully blended just before serving.
  4. Serve hot, garnished with chopped cilantro and lime wedges.

Notes

For a spicier kick, consider adding jalapeños. Store leftovers in airtight containers for up to three days.
