A creamy and comforting white chicken chili featuring tender chicken, white beans, and aromatic spices, perfect for cozy evenings.
Ingredients
- 2 cups cooked shredded chicken
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup corn, frozen or canned
- 1 package (8 oz) cream cheese
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped cilantro for garnish
- Lime wedges for serving
Instructions
- In a large pot or slow cooker, combine the cooked chicken, white beans, green chilies, corn, chicken broth, cumin, garlic powder, onion powder, salt, and pepper.
- If using the stovetop, bring to a simmer over medium heat and stir in the cream cheese until melted and fully blended. Cook for about 20-30 minutes.
- If using a slow cooker, cook on low for 4-6 hours and stir in the cream cheese until melted and fully blended just before serving.
- Serve hot, garnished with chopped cilantro and lime wedges.
Notes
For a spicier kick, consider adding jalapeños. Store leftovers in airtight containers for up to three days.
