Ingredients

  • 1 small yellow onion, diced
  • 1 tbsp olive oil (15 ml)
  • 2 cloves garlic, finely minced
  • 2 cans (411 g) low-sodium chicken broth
  • 1 can (198 g) diced green chilies
  • 1 1/2 tsp (8 ml) cumin
  • 1/2 tsp (3 ml) paprika
  • 1/2 tsp (3 ml) dried oregano
  • 1/2 tsp (3 ml) ground coriander
  • 1/4 tsp (1 ml) cayenne pepper
  • salt and freshly ground black pepper, to taste
  • 1 package (226 g) cream cheese, cut into small cubes
  • 1 1/4 cups (295 ml) frozen or fresh corn
  • 2 cans (425 g) white beans
  • 2 1/2 cups (600 ml) shredded cooked chicken
  • 1 tbsp fresh lime juice (15 ml)
  • 2 tbsp (30 ml) chopped fresh cilantro, plus more for serving
  • Tortilla chips or strips, cheese, sliced avocado for serving (optional)


Instructions

  1. Warm up the olive oil in a big pot on medium-high heat. Cook the diced onion for 4 minutes. Add the minced garlic and continue cooking for another 30 seconds.
  2. Pour in the chicken broth, diced green chilies, cumin, paprika, dried oregano, ground coriander, and cayenne pepper. Season with salt and freshly ground black pepper. Bring the mixture to a gentle boil, then lower the heat to medium-low and let it simmer for 15 minutes.
  3. Rinse and drain the beans using a fine mesh strainer or colander. Measure out 1 cup of the beans and keep the rest whole. Put the 1 cup of beans into a food processor along with 1/4 cup of broth from the soup and blend until almost smooth.
  4. Add the cream cheese to the pot along with corn, the whole beans, and the blended beans. Stir everything together thoroughly and let it simmer for another 5 to 10 minutes.
  5. Mix in the shredded cooked chicken, fresh lime juice, and chopped cilantro. Serve the chili with Monterrey Jack cheese, additional cilantro, avocado slices, and tortilla chips if you like.
