Description

Comforting white chicken enchiladas featuring tender chicken, creamy sauce, and melty cheese, perfect for any gathering.


Ingredients

  • 6 tortillas
  • 2 cups cooked shredded chicken
  • 1 cup cheese (Monterey Jack or Cheddar)
  • 1/4 cup flour
  • 2 tablespoons butter
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 can green chiles


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the chicken broth until smooth. Add the sour cream and green chiles, and stir until combined.
  3. In each tortilla, place a portion of the shredded chicken and cheese, then roll up and place seam side down in a baking dish.
  4. Pour the white sauce over the top of the enchiladas and sprinkle with additional cheese.
  5. Bake for 20-25 minutes or until the cheese is bubbly and golden.
