Ingredients
- 6 tortillas
- 2 cups cooked shredded chicken
- 1 cup cheese (Monterey Jack or Cheddar)
- 1/4 cup flour
- 2 tablespoons butter
- 2 cups chicken broth
- 1 cup sour cream
- 1 can green chiles
Instructions
- Preheat your oven to 350°F (175°C).
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute. Gradually whisk in the chicken broth until smooth. Add the sour cream and green chiles, and stir until combined.
- In each tortilla, place a portion of the shredded chicken and cheese, then roll up and place seam side down in a baking dish.
- Pour the white sauce over the top of the enchiladas and sprinkle with additional cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and golden.
