Creamy chicken wrapped in soft tortillas, topped with cheese and enchilada sauce, perfect for cozy family dinners.
Ingredients
- 2 cups shredded cooked chicken
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1 cup enchilada sauce
- 8 flour tortillas
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Combine the shredded chicken, cream cheese, half of the cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper in a bowl.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Take a tortilla, fill it with the chicken mixture, roll it up, and place it seam-side down in the baking dish.
- Repeat with the remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheddar cheese.
- Bake for 20-25 minutes or until the cheese is bubbly and slightly browned.
- Let cool for a few minutes before serving.
Notes
Serve with fresh cilantro, chopped green onions, or avocado for added freshness.
