Ingredients
- 2 chicken breasts
- 8 oz pasta (your choice)
- 1 cup cherry tomatoes, halved
- 1 bell pepper, sliced
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Preheat the grill to medium-high heat. Season chicken breasts with salt and pepper, then grill for 6-8 minutes per side until cooked through. Let rest and slice.
- Cook pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Sauté garlic until fragrant.
- Add cherry tomatoes and bell pepper; cook until softened, about 3-5 minutes.
- Toss in the cooked pasta, grilled chicken, lemon juice, and basil. Mix well and season with salt and pepper.
