Ingredients

  • 2 lbs (900 g) boneless, skinless chicken breasts
  • 1/4 cup (60 ml) olive oil
  • 3 tablespoons (45 ml) lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) apple cider vinegar
  • 2 teaspoons (5 g) dried oregano
  • 1 teaspoon (2 g) ground cumin
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (1 g) ground black pepper
  • 1/2 teaspoon (1 g) smoked paprika
  • 1/4 teaspoon (0.5 g) crushed red pepper flakes
  • 1 large red bell pepper, cut into chunks
  • 1 large yellow bell pepper, cut into chunks
  • 1 large red onion, cut into chunks
  • Wooden or metal skewers


Instructions

  1. Cut the chicken breasts into 1-inch cubes and set aside.
  2. In a large bowl, mix olive oil, lemon juice, minced garlic, and vinegar.
  3. Add dried oregano, ground cumin, salt, black pepper, paprika, and red pepper flakes to the bowl.
  4. Stir the marinade well until all ingredients are combined.
  5. Place the chicken cubes into the marinade and toss to coat thoroughly.
  6. Cover the bowl and marinate in the refrigerator for at least 30 minutes.
  7. Soak wooden skewers in water for 30 minutes if using them.
  8. Preheat the grill to medium-high heat.
  9. Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion onto the skewers, alternating ingredients.
  10. Place the skewers on the preheated grill.
  11. Cook the skewers for 10-12 minutes, turning occasionally to ensure even cooking.
  12. Grill until the chicken is cooked through and vegetables are charred.
  13. Remove the skewers from the grill and let them rest for a few minutes.
  14. Serve the skewers warm.
