Ingredients
- 2 lbs (900 g) boneless, skinless chicken breasts
- 1/4 cup (60 ml) olive oil
- 3 tablespoons (45 ml) lemon juice
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) apple cider vinegar
- 2 teaspoons (5 g) dried oregano
- 1 teaspoon (2 g) ground cumin
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (1 g) ground black pepper
- 1/2 teaspoon (1 g) smoked paprika
- 1/4 teaspoon (0.5 g) crushed red pepper flakes
- 1 large red bell pepper, cut into chunks
- 1 large yellow bell pepper, cut into chunks
- 1 large red onion, cut into chunks
- Wooden or metal skewers
Instructions
- Cut the chicken breasts into 1-inch cubes and set aside.
- In a large bowl, mix olive oil, lemon juice, minced garlic, and vinegar.
- Add dried oregano, ground cumin, salt, black pepper, paprika, and red pepper flakes to the bowl.
- Stir the marinade well until all ingredients are combined.
- Place the chicken cubes into the marinade and toss to coat thoroughly.
- Cover the bowl and marinate in the refrigerator for at least 30 minutes.
- Soak wooden skewers in water for 30 minutes if using them.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion onto the skewers, alternating ingredients.
- Place the skewers on the preheated grill.
- Cook the skewers for 10-12 minutes, turning occasionally to ensure even cooking.
- Grill until the chicken is cooked through and vegetables are charred.
- Remove the skewers from the grill and let them rest for a few minutes.
- Serve the skewers warm.
