Description

A comforting blend of zucchini and corn in a creamy broth, accented by crispy bacon.


Ingredients

  • 2 medium zucchinis, diced
  • 2 cups fresh corn kernels (or canned)
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Chopped chives for garnish


Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the diced onion and garlic to the pot, and sauté until translucent.
  3. Add the diced zucchini and corn, and cook for a few minutes until slightly softened.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes.
  5. Stir in the heavy cream and season with salt and pepper. Simmer for an additional 5 minutes.
  6. Serve hot, garnished with crispy bacon and chopped chives.

Notes

For a richer flavor, consider adding fresh herbs like thyme or parsley.
