Description
A comforting blend of zucchini and corn in a creamy broth, accented by crispy bacon.
Ingredients
- 2 medium zucchinis, diced
- 2 cups fresh corn kernels (or canned)
- 4 slices of bacon, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the diced onion and garlic to the pot, and sauté until translucent.
- Add the diced zucchini and corn, and cook for a few minutes until slightly softened.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes.
- Stir in the heavy cream and season with salt and pepper. Simmer for an additional 5 minutes.
- Serve hot, garnished with crispy bacon and chopped chives.
Notes
For a richer flavor, consider adding fresh herbs like thyme or parsley.
