A delightful crispy chicken recipe marinated in dill pickle juice, packed with flavor from seasoned breadcrumbs and Parmesan cheese.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup dill pickle juice
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large eggs
- 1 cup seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- Oil for frying
Instructions
- Marinate chicken breasts in dill pickle juice for at least 1 hour, preferably overnight.
- Set up a breading station with three bowls: 1 for seasoned flour, 1 for whisked eggs, and 1 for breadcrumb-Parmesan mixture.
- Dredge each chicken breast in the seasoned flour, then dip in the egg, and finally coat with breadcrumb mixture.
- Heat oil in a skillet over medium heat and add the chicken breasts carefully.
- Cook for 5 to 7 minutes on each side or until golden brown and cooked through (165°F/75°C).
- Remove from skillet and let rest for 5 to 10 minutes before serving.
Notes
For extra crunch, consider double-dipping the chicken in the egg wash and breadcrumbs. Serve with your favorite sides and dipping sauces.
