Ingredients

  • 2 large Boneless Skinless Chicken Breasts, or 4 chicken cutlets thighs are also fine to use
  • 1/4 Cup (60 ml) Ranch Dressing
  • 1/4 Cup (60 ml) Italian Dressing
  • 1 tsp (5 ml) Garlic Powder
  • 1 tsp (5 ml) Onion Powder
  • 1 tsp (5 ml) Dried Basil
  • 1 tsp (5 ml) Black Pepper
  • 5 oz (71 g) Shredded Parmesan Cheese
  • 1/2 Cup (120 ml) Ranch Dressing
  • 1 Cup (240 ml) Italian Style Panko Breadcrumbs
  • 1 Cup (240 ml) Grated Parmesan Cheese
  • 4 tbsp (60 ml) Unsalted Butter, melted
  • 1 tsp (5 ml) Avocado Oil
  • 1 tbsp (15 ml) Unsalted Butter
  • 4 Provolone Cheese Slices
  • 2 Moz zarella Slices


Instructions

  1. Slice the chicken breasts into thinner pieces or opt for cutlets.
  2. In a mixing bowl, combine the two dressings with the garlic powder, onion powder, dried basil, and black pepper. Let the chicken soak in this marinade for at least half an hour or up to overnight in the refrigerator.
  3. Stir together the shredded Parmesan cheese and ranch dressing in a separate container and put it aside.
  4. In another bowl, blend the Panko breadcrumbs with grated Parmesan and melted butter, then set this mixture aside as well.
  5. Warm the avocado oil and a tablespoon of butter in a pan over medium heat, then sear the chicken until it’s thoroughly cooked and develops a golden crust on both sides. As the chicken is cooking, set your oven to a low broil setting.
  6. Place slices of provolone and mozzarella on each piece of chicken, followed by the Parmesan and ranch mixture. Broil in the oven for roughly five minutes.
  7. Finish by adding the breadcrumb mixture on top and broil for an additional 4 to 5 minutes, or until the cheeses are bubbling and the breadcrumbs are crisp and golden.
